Potato Salad (still being perfected)

Ingredients

  • Baby potatoes, boiled
  • 2 boiled eggs, sliced
  • 1 onion finely diced and sautéed
  • 5 spears asparagus blanched and chopped
  • 4 gherkins, sliced
  • 2 handfuls baby spinach
  • 6 Tbsp mayonnaise
  • 3 Tbsp gherkin juice (from the jar)
  • 1 Tbsp strong mustard (Dijon)
  • Salt & pepper
  • Chives to top

Method

  1. Boil potatoes.
  2. Boil eggs.
  3. Dice onion and sauté.
  4. Blanch asparagus.
  5. In the bowl, mix mayonnaise, gherkin juice, mustard, salt & pepper. Whisk until combined and smooth.
  6. Add all other ingredients to bowl and mix to combine.
  7. Top with chives.

  • 1 bunch asparagus, boiled
  • 1.5 cups spinach, fresh
  • 5 boiled eggs

Sauce

  • 250g sour cream
  • 2 tsp apple cider vinegar
  • 4 Tbsp dijon mustard
  • Fresh basil
  • Fresh coriander
  • Salt & pepper

Method

  1. Boil potatoes.
  2. Boil asparagus.
  3. Boil eggs.
  4. Combine sauce and whisk.
  5. Add all ingredients to a bowl.
  6. Garnish with avocado!
