Homemade Pizza Extreme-o

Ingredients:

Dough

  • 2/3 cup, 160ml warm water
  • 1 tsp yeast
  • 2 cups flour
  • Pinch of salt
  • 1 tsp sugar
  • 1 Tbsp olive oil

Toppings (our favourites)…

  • Tomato paste
  • Caramelised onions
  • Mushrooms
  • Sundried and/or fresh tomatoes
  • Olives
  • Jalapeños
  • Salami
  • Bacon
  • Spinach
  • Cheese
  • Basil

Method:

  1. For dough, put all ingredients in bread maker, and set to “pizza dough” cycle, typically 45 minutes. Alternatively, combine, knead and let rise once.
  2. Caramelise onions (with balsamic vinegar).
  3. Chop vegetables and grate cheese.
  4. Roll out the dough and pre-cook it in the oven, ideally with a pizza stone.
  5. Adding toppings, we start with tomato paste followed by onions, then all veges, spinach last, followed by cheese.
  6. Cook in the oven until crust brown and cheese browned.
  7. Add fresh basil when serving.
