Hollandaise Sauce

Ingredients

  • 150g butter (olivani worked)
  • 2 large egg yolks
  • 1 dessert spoon white vinegar
  • 1 lemon

Method

  1. Put a pot of water over the heat, with a heat proof bowl that can fit inside (keep the bowl off the pot until later). Bring water to a simmer.
  1. Heat butter/olivani until melted (in a separate pot or Pyrex jug). Have ready to go on the side.
  2. Turn heat right down on the pot of water, crack the 2 egg yolks into the heat proof bowl and place on top of the water pot. Whisk eggs. (Too hot and these will scramble).
  3. Add the vinegar, continue whisking.
  4. Add butter slowly, continuing to whisk. It will slowly thicken up.
  5. Add salt & pepper, and lemon a little at a time (lemon will loosen it up). Continue whisking and adding lemon until it tastes as you’d like it.
