5-Ingredient Granola Bar

One of my favourite refined sugar free treats! Awesome for hikes or long runs.

Ingredients

  • 1 heaping cup packed dates (I sometimes soak them in boiling water for 5 minutes then drain to make them a bit softer)
  • 1/4 cup maple syrup or agave nectar or honey
  • 1/4 cup peanut butter or almond butter
  • 1 cup roasted almonds, loosely chopped 
  • 1 1/2 cups rolled oats 
  • Optional additions: vanilla essence, chocolate chips, dried fruit, nuts, banana chips

Method

  1. Process dates in a food processor for approx. 1 minute. Small bits will remain, but it will roll into a ball.
  2. Toast your oats and almonds in the oven at 175 C for 10-15 minutes until slightly golden brown (you can keep them raw if you prefer).
  3. Place oats, almonds and dates in a bowl, and set aside.
  4. Warm honey and peanut butter in a small saucepan over low heat. Stir and pour over the oat mixture, and then mix to break up the dates and combine it all.
  5. Transfer to an 8×8 inch lined baking dish (or similar).
  6. Press down firmly until all the same thickness – I used a jar or drinking glass to press down (it helps them hold together better).
  7. Place in the fridge or freeezr for 15-20 minutes to firm up.
  8. Remove bars from pan and chop – I prefer long, skinny bars.
