Forgotten Fruit Muffins

Ingredients

  • 2 cups flour
  • 3 tsps baking powder
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup oil
  • 1 tsp vanilla
  • 1 cup yoghurt
  • 1 cup fruit: it doesn’t matter what type of fruit it is, but apples and pears will need to be cooked to a soft texture first). Could use: peaches, nectarines, plums, apricots or rhubarb.

Method

  1. Beat together egg, oil, vanilla & yoghurt.
  2. Add flour, baking powder and sugar into bowl, along with chopped 1 cup of forgotten fruit, and gently, very gently, combine all of the ingredients.
  3. Spoon into muffin cases and sprinkle the top of each muffin with a pinch of brown sugar & a sprinkle of rolled oats.
  4. Cook at 180 for 20-25 mins (watch the tops don’t burn)
