Coleslaw

From Chelsea Winter

Ingredients

  • 4 cups cabbage, sliced/chopped finely
  • 1 carrot grated
  • 2 sticks celery finely chopped
  • 1/2 cup chopped herbs (coriander, mint, parsley)
  • 1/2 cup roasted peanuts, roughly chopped
  • 1/3 cup mayo
  • 1/2 tsp sesame oil
  • 2 tsp lime or lemon juice
  • 1 clove garlic, crushed

Method

  1. Prepare the veg and place in a bowl
  2. Mix together mayo, sesame oil, lemon/lime juice and garlic.
  3. Mix through the veg with the peanuts.
