Olive Oil Flaky Pastry

Ingredients

Makes a great amount for a standard pie dish!

  • 1 and 1/2 cups flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1/4 cup olive oil
  • 1/2 cup lukewarm water

Method

  1. Mix dry ingredients, add wet ingredients, bring together (no kneading required). Shouldn’t be sticky, add more flour if needed.
  2. Sit in fridge for 30 mins – overnight.
  3. Roll out using more flour, and place in a buttered dish before adding pie filling and closing up.
  4. Brush top with whisked egg or some kind of milk.
  5. Cook around 200 degrees for 15mins, then turn down to 160 to finish cooking for another 20mins.
