Chocolate Chunk Cookies

A speical recipe from Jo

Ingredients

  • 200g olivani (or butter)
  • 1 1/2 cups brown sugar, packed
  • 2 eggs
  • 1 TBSP vanilla essence
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 2/3 cups flour
  • 2 cups chocolate chunks (I prefer a combination of white & dark chocolate, but you can also do macadamia nuts and white chocolate)

Method

  1. Beat olivani and sugar on medium speed for 3 minutes.
  2. Add eggs and vanilla and continue mixing for 1 more minute. or until mixture pales in colour slightly.
  3. Add in baking soda and salt and continue mixing for 30 seconds on medium.
  4. Turn mixer to low speed and add flour until evenly incorporated.
  5.  Stir in chocolate (or other combinations).
  6. Chill dough for 2 hours or until stiff.
  7. While chilling, preheat oven to 175 celsius.
  8. Spoon on a lined tray and bake for 10-12 minutes.
  9. We also learned Sarah’s trick, to chill the mixture, then roll the balls and keep them in the freezer! When you’re ready to bake them, preheat the oven and bake those you want!
