Not convinced I’ve found the best recipe yet…
Ingredients
- 280g dates, roughly chopped
- 1tsp baking soda
- 1 cup boiling water
- 1/4 cup brown sugar
- 8-g butter
- 2 eggs
- 1 1/4 cups flour
- 1 1/2 tsp baking powder
Butterscotch sauce
- 1 1/4 cups brown sugar
- 1 1/2 cups cream
- 1/2 tsp vanilla
- 70g butter
Method
- Preheat oven to 180 (or 160 if fan bake)
- Grease a square baking dish, or 6x individual ramekins
- Place dates in a bowl, sprinkle over baking soda. Pour over boiling water. Leave for 10 minutes then mash well with a potato masher.
- Beat butter & sugar in a bowl. Add eggs & beat.
- Add flour and baking powder and mix.
- Add dates and combine until just incorporated.
- Pour into chosen baking dish(es) and bake for 30 minutes (1 dessert) or 20 minutes (individual ramekins), until skewer comes out clean.
- To make butterscotch sauce, place all ingredients in a saucepan over medium heat. Once the butter is melted, stir and bring to a simmer. Simmer for 2 minutes stirring just once, then remove from the heat.
- While dessert is still hot, poke holes throughout the entire dessert and spoon over approx. 1/2 cup of butterscotch sauce. Leave to soak for 10 minutes.
- Serve with cream or ice cream and remaining sauce.
