Ingredients:
- 50g butter
- 2c flour
- 1c sugar
- 2tsp baking powder
- 1 egg
- Milk to soften
- Cinnamon (optional)
Method:
- Heat oven to 180 C
- Rub butter into flour, baking powder, and sugar.
- Add egg.
- Mix with milk until soft/scone-like mix.
- Halve, roll out bottom half and put fruit in and optional cinnamon.
- Roll out top and put together. You can add more milk in top to soften it further if needed.
Tip: I like to put it in a smaller cake-size square tin, as if you put it on a baking tray it can flatten out quite a bit (and cooks much faster when thinner). - Cook at 180 until firm to the touch and browned on top, ideally slightly uncooked in the middle.
