Ingredients
- 4 pears, peeled cored and thinly sliced
- 1 1/4 cups flour
- 1 1/4 tsp baking powder
- 1 TBSP ground ginger
- 1 tsp mixed spice
- 1/2 cup brown sugar
- 1/2 cup milk
- 1 egg
- 100g butter, melted
- 2 TBSP golden syrup
On top
- 1 TBSP cornflour
- 1/2 cup brown sugar
- 2 cups boiling water
- 2 TBSP golden syrup
Method
- Grease a baking dish
- Preheat oven to 160 fan bake
- Place the pears in the bottom of the dish
- Combine milk, egg, butter & golden syrup in a bowl.
- Add flour, baking powder, spices & brown sugar and stir until smooth.
- Spoon the batter over the pears, evenly.
- Combine the cornflour and bornw sugar and sprinkle over the batter.
- Stir together the bouling water and golden syrup in a jug then pour over the back of a large spoon over the top of the pudding.
- Place into the oven to bake for about 40 minutes, until golden and firm to touch.
