Pear & Ginger Self-Saucing Pudding

Ingredients

  • 4 pears, peeled cored and thinly sliced
  • 1 1/4 cups flour
  • 1 1/4 tsp baking powder
  • 1 TBSP ground ginger
  • 1 tsp mixed spice
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1 egg
  • 100g butter, melted
  • 2 TBSP golden syrup

On top

  • 1 TBSP cornflour
  • 1/2 cup brown sugar
  • 2 cups boiling water
  • 2 TBSP golden syrup

Method

  1. Grease a baking dish
  2. Preheat oven to 160 fan bake
  3. Place the pears in the bottom of the dish
  4. Combine milk, egg, butter & golden syrup in a bowl.
  5. Add flour, baking powder, spices & brown sugar and stir until smooth.
  6. Spoon the batter over the pears, evenly.
  7. Combine the cornflour and bornw sugar and sprinkle over the batter.
  8. Stir together the bouling water and golden syrup in a jug then pour over the back of a large spoon over the top of the pudding.
  9. Place into the oven to bake for about 40 minutes, until golden and firm to touch.
