Vegan Lemon Drizzle Cake

Always a  winner.

Ingredients

  • 150 grams olivani/butter
  • 175g sugar
  • 200g flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 50g ground almonds
  • Pinch salt
  • 150 ml milk
  • 3 lemons, zest grated from 2 and juice from 3
  • 4 Tbsp sugar

Method

  1. Preheat oven to 180
  2. Grease a cake time and line the base with baking paper
  3. Mix the butter & sugar
  4. Add flour, baking powder and soda, ground almonds and salt.
  5. Add milk, lemon zest and juice from 1 lemon
  6. Beat well until the ingredients are thoroughly combined and the mixture is smooth
  7. Spoon mix into prepared tin, spread level and bake for 50ish minutes.
  8. Leave cake to sit for 5 mins.
  9. Combine the juice from the 2 remaining lemons, and the sugar and evenly spoon over the cake.
