- 1 cup edamame beans (boil from frozen for 3 minutes)
- 2 mangoes cubed
- 1 cup baby spinach
- 1/2 cup almonds roughly chopped
- 1 capsicum chopped
Dressing:
- Olive oil
- Apple cider vinegar
- Juice and zest from one orange
- Coriander
- Salt and pepper
