Black rice, mango, edamame salad

Ingredients:
  • 1 cup black rice cooked
  • 2-3 ears corn, cooked and cut
  • 1 cup edamame beans (boil from frozen for 3 minutes)
  • 2 mangoes cubed
  • 1 cup baby spinach
  • 1/2 cup almonds roughly chopped
  • 1 capsicum chopped

Dressing:

  • Olive oil
  • Apple cider vinegar
  • Juice and zest from one orange
  • Coriander
  • Salt and pepper
