Ingredients
Base
- Medium-sized cauliflower blended into rice-sized pieces
- 1 cup cheese
- 2 eggs
- 1 tsp oregano/basil
- Salt and pepper
Toppings… some of our favourites:
- Tomato paste
- Caramelised onion
- Pumpkin
- Sundried tomato
- Mushrooms
- Spinach
- Olives
- Jalepeños
- Cream cheese
- Pesto
- Cheese to top!
Method
- To make the base, blitz the cauliflower until rice-sized pieces (I did it in 4 batches in the Vitamix)
- Then steam for 15 minutes to ‘cook.’
- Drain excess water from cauliflower
- Then mix in a bowl with cheese, eggs, herbs, salt and pepper.
- Lay onto a greased/lined tray and press until approx 1cm deep.
- Bake on 200 celcius for 25 minutes, or until it starts browning.
- Top the pizza with your selection, and put back in the oven for 10-15 minutes (grill for the final 2-3 minutes if the cheese is not browning).
This is a knife and fork pizza… not a pick up by hand one! Enjoy 🙂
