Cauliflower Base Pizza

Ingredients

Base

  • Medium-sized cauliflower blended into rice-sized pieces
  • 1 cup cheese
  • 2 eggs
  • 1 tsp oregano/basil
  • Salt and pepper

Toppings… some of our favourites:

  • Tomato paste
  • Caramelised onion
  • Pumpkin
  • Sundried tomato
  • Mushrooms
  • Spinach
  • Olives
  • Jalepeños
  • Cream cheese
  • Pesto
  • Cheese to top!

Method

  1. To make the base, blitz the cauliflower until rice-sized pieces (I did it in 4 batches in the Vitamix)
  2. Then steam for 15 minutes to ‘cook.’
  3. Drain excess water from cauliflower
  4. Then mix in a bowl with cheese, eggs, herbs, salt and pepper.
  5. Lay onto a greased/lined tray and press until approx 1cm deep.
  6. Bake on 200 celcius for 25 minutes, or until it starts browning.
  7. Top the pizza with your selection, and put back in the oven for 10-15 minutes (grill for the final 2-3 minutes if the cheese is not browning).

This is a knife and fork pizza… not a pick up by hand one! Enjoy 🙂
