Ingredients
- 1 heads of broccoli, chopped into florets
Cheese Sauce:
- 35g olivani / butter
- 1/4 cup flour
- 1 1/2 cups milk (can be substituted for almond/soy)
- 1/4 tsp grated nutmeg
- 1 cup cheese
Method
- Turn oven to fan grill at 180 celcius.
- Steam broccoli for 3-5 minutes, just enough to make it go bright green.
- Place it in an oven-proof dish, covering the bottom.
Cheese Sauce:
- Melt butter in a medium-sized pot, until sizzling but not brown.
- Add flour and stir over heat for a minute.
- Add nutmeg, and 1/2 cup of milk, stirring continuously until the sauce begins to thicken.
- Add remaining milk and continue stirring until the sauce becomes thick and smooth.
- Finally, add cheese (saving just a tiny bit to go on top) and stir until melted through.
- Season to taste with salt and pepper.
- Pour over the broccoli, and top with the remaining cheese.
- Bake for 20 minutes, or until the top is golden brown.
