Cheesy Broccoli

Ingredients

  • 1 heads of broccoli, chopped into florets

Cheese Sauce:

  • 35g olivani / butter
  • 1/4 cup flour
  • 1 1/2 cups milk (can be substituted for almond/soy)
  • 1/4 tsp grated nutmeg
  • 1 cup cheese

Method

  1. Turn oven to fan grill at 180 celcius.
  2. Steam broccoli for 3-5 minutes, just enough to make it go bright green.
  3. Place it in an oven-proof dish, covering the bottom.

Cheese Sauce:

  1. Melt butter in a medium-sized pot, until sizzling but not brown.
  2. Add flour and stir over heat for a minute.
  3. Add nutmeg, and 1/2 cup of milk, stirring continuously until the sauce begins to thicken.
  4. Add remaining milk and continue stirring until the sauce becomes thick and smooth.
  5. Finally, add cheese (saving just a tiny bit to go on top) and stir until melted through.
  6. Season to taste with salt and pepper.
  7. Pour over the broccoli, and top with the remaining cheese.
  8. Bake for 20 minutes, or until the top is golden brown.
