From Chelsea Winter
Ingredients
- 4 cups cabbage, sliced/chopped finely
- 1 carrot grated
- 2 sticks celery finely chopped
- 1/2 cup chopped herbs (coriander, mint, parsley)
- 1/2 cup roasted peanuts, roughly chopped
- 1/3 cup mayo
- 1/2 tsp sesame oil
- 2 tsp lime or lemon juice
- 1 clove garlic, crushed
Method
- Prepare the veg and place in a bowl
- Mix together mayo, sesame oil, lemon/lime juice and garlic.
- Mix through the veg with the peanuts.
