Ingredients:
Fish
- Fish pieces
- 1/4 cup cornflour
- 1/2 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- Oil for frying
The rest of the party
- Wraps (small are best)
- Coleslaw
- Mayonnaise
- Coriander
- Avocado (optional)
Method
1. Heat a pan with 1cm of oil. Place a couple of layers of paper towel onto a plate. Place the wraps in tinfoil and on approx. 150 Celsius in the oven.
2. Mix all of the batter ingredients together with a whisk, and coat each piece of fish in it (covering all sides).
3. Place each piece of fish in the oil as you prepare them, and flip as each side browns.
4. Remove from the pan once finished cooking, and place on the plate to absorb some of the oil.
5. Serve fish as quickly as you can with coleslaw, mayonnaise and coriander on wraps.
