Focaccia Bread

Ingredients

  • 2 tsp yeast
  • 1 1/2 cups water
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1 Tbsp olive oil
  • 3 cups (420g) high-grade white flour
  • 1 tsp dried oregano

Toppings

  • 1 Tbsp olive oil
  • Coarse rock or flaky salt
  • Rosemary (optional)
  • Sliced olives (optional)

Method

  1. Combine the bread ingredients in a bowl.
  2. Knead on a flat surface for 3-5mins.
  3. Put back in bowl with oil coating the dough ball to stop it sticking, cover with tea towel, and place in a warm spot in the house for 45-60mins to rise.
  4. After it’s doubled in size, or at least grown significantly, knead again for 3-5 mins.
  5. Tuck the bottom edges under as you make it into a loaf shape. Set on lightly oiled baking paper in a warm place to rise again for 30-45mins.
  6. Bake at 225 degrees for 15 minutes or until golden brown top and bottom.
