Jamie’s Fish Curry

Ingredients

  • 2 large onions
  • 4 cloves garlic
  • 2.5cm ginger
  • 1 chilli
  • Fish
  • Oil
  • Zest 1 lime
  • 1 tsp mustard seeds
  • 1/4 tsp chilli powder
  • 1 tsp turmeric
  • Tin tomatoes 400g
  • Tin coconut cream 400g
  • Coriander & rice to serve

Method

  1. Slice onion, garlic, ginger & chilli. Zest lime. Chop fish.
  2. Heat oil in pot and add mustard seeds (until popping) followed by lime zest, onion, garlic, ginger & chilli.
  3. Cook 5 mins until onion softened.
  4. Add chilli powder and turmeric to a little water and mix. Add to pot.
  5. Fry for 1 minute then add fish, tomatoes and coconut cream
  6. Season, bring to the boil and let simmer for 20ish mins.
  7. Cook rice.
  8. Serve with coriander (and we did steamed broccoli too)
