Kumara Rostis

Ingredients

  • 3 cups kumara peeled and grated
  • 1 onion finely diced
  • 4 eggs
  • 1/2 tsp ground chilli
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp mild curry powder
  • 1 tsp fresh grated ginger
  • S&P
  • 3/4 cup flour

Method

  1. Mix all ingredients together in a bowl.
  2. Heat a pan with a bit of oil.
  3. Scoop a handful of mixture, squash together and keep thick ideally all the way to the edges (ie. no thin edges)
  4. Cook on a low heat, flipping when light brown.
  5. Put all rostis on a tray and in the oven for 15 minutes to cook through.
  6. Serve with sour cream / aoli / hummus and sweet chilli sauce & lemon juice.
