Ingredients
- 3 cups kumara peeled and grated
- 1 onion finely diced
- 4 eggs
- 1/2 tsp ground chilli
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp mild curry powder
- 1 tsp fresh grated ginger
- S&P
- 3/4 cup flour
Method
- Mix all ingredients together in a bowl.
- Heat a pan with a bit of oil.
- Scoop a handful of mixture, squash together and keep thick ideally all the way to the edges (ie. no thin edges)
- Cook on a low heat, flipping when light brown.
- Put all rostis on a tray and in the oven for 15 minutes to cook through.
- Serve with sour cream / aoli / hummus and sweet chilli sauce & lemon juice.
