Ingredients
- Baby potatoes, boiled
- 2 boiled eggs, sliced
- 1 onion finely diced and sautéed
- 5 spears asparagus blanched and chopped
- 4 gherkins, sliced
- 2 handfuls baby spinach
- 6 Tbsp mayonnaise
- 3 Tbsp gherkin juice (from the jar)
- 1 Tbsp strong mustard (Dijon)
- Salt & pepper
- Chives to top
Method
- Boil potatoes.
- Boil eggs.
- Dice onion and sauté.
- Blanch asparagus.
- In the bowl, mix mayonnaise, gherkin juice, mustard, salt & pepper. Whisk until combined and smooth.
- Add all other ingredients to bowl and mix to combine.
- Top with chives.

- 250g sour cream
- 2 tsp apple cider vinegar
- 4 Tbsp dijon mustard
- Fresh basil
- Fresh coriander
- Salt & pepper
Method
- Boil potatoes.
- Boil asparagus.
- Boil eggs.
- Combine sauce and whisk.
- Add all ingredients to a bowl.
- Garnish with avocado!
