Ingredients
- 1 large marrow
- 1 onion, finely chopped
- 4 tomatoes, chopped
- 1 cup breadcrumbs
- 1-2 corn, de-husked (optional)
- 1 1/2 cups cheese (some for stuffing and some for on top)
- 1 tsp oregano
- 1 tsp basil
- Salt & pepper
Method
- Oven, fan bake 200 celcius.
- Cut the marrow in half and scoop out the insides (throw insides away).
- In a bowl, combine onion, tomato, breadcrumbs, corn, half of the cheese, plus herbs, salt and pepper.
- Scoop the stuffing from the bowl into the marrow, being sure to firmly press it down.
- Top with the remaining cheese.
- Cook for 35-45 minutes.
