Stuffed Marrow

Ingredients

  • 1 large marrow
  • 1 onion, finely chopped
  • 4 tomatoes, chopped
  • 1 cup breadcrumbs
  • 1-2 corn, de-husked (optional)
  • 1 1/2 cups cheese (some for stuffing and some for on top)
  • 1 tsp oregano
  • 1 tsp basil
  • Salt & pepper

Method

  1. Oven, fan bake 200 celcius.
  2. Cut the marrow in half and scoop out the insides (throw insides away).
  3. In a bowl, combine onion, tomato, breadcrumbs, corn, half of the cheese, plus herbs, salt and pepper.
  4. Scoop the stuffing from the bowl into the marrow, being sure to firmly press it down.
  5. Top with the remaining cheese.
  6. Cook for 35-45 minutes.
