Ingredients
- 4 sheets nori
- 1 cup quinoa (or sushi rice) cooked
- Chosen fillings, thinly sliced. Some of our fillings include:
- Salmon
- Tuna
- Cucumber
- Capsicum
- Avocado ?
- Egg thinly cooked
- Sesame seeds
Dressing
- 1 Tbsp Apple cider vinegar
- 1.5 teaspoons maple syrup
- 1 Tbsp tahini
- Juice 1/2 lemon
- 1 Tbsp grated ginger
Method
- Whisk together all dressing ingredients
- Mix dressing into warm quinoa or rice and blend until quinoa / rice is sticky. Cover and let sit.
- Wet your hands and start with the first sheet of nori (shiny side down). Spread 1/4 of the quinoa/rice on 2/3 of the nori sheet.
- Arrange the fillings along the middle.
- Sprinkle with sesame seeds.
- Wet the nori that has not been covered with rice/quinoa, then start rolling from the quinoa/rice end.
- Once the fillings are covered, tuck them under and gently tighten the roll all the way around until it seals against the wet nori.
- Transfer to a chopping board, and with a sharp knife carefully cut each roll into 6-8 pieces.
