Sushi

Ingredients

  • 4 sheets nori
  • 1 cup quinoa (or sushi rice) cooked
  • Chosen fillings, thinly sliced. Some of our fillings include:
    • Salmon
    • Tuna
    • Cucumber
    • Capsicum
    • Avocado ?
    • Egg thinly cooked
  • Sesame seeds

Dressing

  • 1 Tbsp Apple cider vinegar
  • 1.5 teaspoons maple syrup
  • 1 Tbsp tahini
  • Juice 1/2 lemon
  • 1 Tbsp grated ginger

Method

  1. Whisk together all dressing ingredients
  2. Mix dressing into warm quinoa or rice and blend until quinoa / rice is sticky. Cover and let sit.
  3. Wet your hands and start with the first sheet of nori (shiny side down). Spread 1/4 of the quinoa/rice on 2/3 of the nori sheet.
  4. Arrange the fillings along the middle.
  5. Sprinkle with sesame seeds.
  6. Wet the nori that has not been covered with rice/quinoa, then start rolling from the quinoa/rice end.
  7. Once the fillings are covered, tuck them under and gently tighten the roll all the way around until it seals against the wet nori.
  8. Transfer to a chopping board, and with a sharp knife carefully cut each roll into 6-8 pieces.
