Ingredients
- 500g white fish
- 100g green beans
- 1 lemongrass
- 2 Tbsp basil, chopped
- 1 Tbsp chives, chopped
- 1 egg
- Juice 1/2 lime
- 1 chilli
- Ginger (thumb-sized piece, chopped)
- 1 Tbsp red curry paste
- 1 Tbsp fish sauce
- 2 Tbsp vegetable oil
Method
- Ensure bones are out of the fish, then whizz it up in a food processor until smooth.
- Add all other ingredients (except vegetable oil).
- Place mixture in the fridge for 10 minutes.
- Heat the oil in a large frying pan over medium heat. Using a spoon and your hands, form cakes from the fish mixture. Cook for 4-5 minutes on each side until the fish cakes are golden brown.
- Makes 6-8 cakes.
