Thai Fish Cakes

Ingredients

  • 500g white fish
  • 100g green beans
  • 1 lemongrass
  • 2 Tbsp basil, chopped
  • 1 Tbsp chives, chopped
  • 1 egg
  • Juice 1/2 lime
  • 1 chilli
  • Ginger (thumb-sized piece, chopped)
  • 1 Tbsp red curry paste
  • 1 Tbsp fish sauce
  • 2 Tbsp vegetable oil

Method

  1. Ensure bones are out of the fish, then whizz it up in a food processor until smooth.
  2. Add all other ingredients (except vegetable oil).
  3. Place mixture in the fridge for 10 minutes.
  4.  Heat the oil in a large frying pan over medium heat. Using a spoon and your hands, form cakes from the fish mixture. Cook for 4-5 minutes on each side until the fish cakes are golden brown.
  5. Makes 6-8 cakes.
