The Best Summer Salad – Corn & Cos Lettuce

Ingredients

  • 4 cobs corn
  • 1 cos lettuce
  • Shaved parmesan
  • Paprika and/or chilli powder

Dressing

  • 3 TSBP greek yoghurt
  • 3 TSBP mayonnaise
  • Zest 1 lime
  • 2 TSBP lime juice
  • 2 cloves garlic, crushed
  • 1/4 cup grated parmesan

Method

  1. Pre-cook corn, then finish on the BBQ to char the corn
  2. Whisk all dressing ingredients together in a bowl and season with salt & pepper
  3. Toss the cos leaves with the dressing, then top with corn, shaved parmesan and paprika/chilli.
