Ingredients
- 4 cobs corn
- 1 cos lettuce
- Shaved parmesan
- Paprika and/or chilli powder
Dressing
- 3 TSBP greek yoghurt
- 3 TSBP mayonnaise
- Zest 1 lime
- 2 TSBP lime juice
- 2 cloves garlic, crushed
- 1/4 cup grated parmesan
Method
- Pre-cook corn, then finish on the BBQ to char the corn
- Whisk all dressing ingredients together in a bowl and season with salt & pepper
- Toss the cos leaves with the dressing, then top with corn, shaved parmesan and paprika/chilli.
