Ingredients
- 150g butter (olivani worked)
- 2 large egg yolks
- 1 dessert spoon white vinegar
- 1 lemon
Method
- Put a pot of water over the heat, with a heat proof bowl that can fit inside (keep the bowl off the pot until later). Bring water to a simmer.
- Heat butter/olivani until melted (in a separate pot or Pyrex jug). Have ready to go on the side.
- Turn heat right down on the pot of water, crack the 2 egg yolks into the heat proof bowl and place on top of the water pot. Whisk eggs. (Too hot and these will scramble).
- Add the vinegar, continue whisking.
- Add butter slowly, continuing to whisk. It will slowly thicken up.
- Add salt & pepper, and lemon a little at a time (lemon will loosen it up). Continue whisking and adding lemon until it tastes as you’d like it.
