Snickers Bliss Balls

Ingredients

  • 1 cup cashews
  • 1/2 cup crushed peanuts
  • 6 tablespoons peanut butter
  • 2 tablespoon honey OR rice malt vinegar
  • 2 tablespoons maple syrup
  • 3 tablespoons cacao or cocoa
  • 1/2 teaspoon concentrated natural vanilla extract
  • pinch of salt

Method

  1. Place the ingredients into a food processor and blend until the mixture is combined but still has texture.
  2. Use your hands to press and shape the mixture into balls (sometimes wetting your hands a bit can help)
  3. Place the balls into the fridge to set.

Carrot Cake Bliss Balls

Ingredients

  • 16 dates (if using Medjool, 12)
  • 1 cup oats 
  • ½ cup walnuts (I substituted for cashews)
  • 1/2 cup fresh carrot, grated
  • 1 tablespoon chia seeds
  • 2 teaspoons fresh ginger, grated
  • 1 teaspoon vanilla extract
  • Shredded coconut for dusting

Method

  1. Soak dates in hot water for several minutes. When the dates are softened, drain them and place in food processor. Save the water.
  2. Add the other ingredients to a food processor and blend until mixture turns into a dough-like consistency. Add 1 tablespoon of date-soaking water if the mixture is too dry.
  3. Scoop the mixture and roll into balls. Roll the balls in shredded coconut and place on the baking sheet.
  4. Refrigerate or freeze.

Gingerbread Bliss Balls

Ingredients

  • 1 cup of dates pitted (I soak them in boiling water for 1-minute before draining and squeezing as much water out as possible)
  • 2 teaspoons of cinnamon
  • 1 teaspoon of ginger
  • 1/4 teaspoon of cloves
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of vanilla extract
  • 3/4 cup of oats
  • 2/3 cup of ground almonds

Method

  1. Place all of the ingredients (except dates) into a food processor and whizz until all combined and ground down into a crumb.
  2. Add in the dates, a few at a time while the food processor is still going – the mixture should go all sticky.
  3. Once the dates have combined in with the dry ingredients roll them into balls.
  4. Place the balls into the fridge to set for an hour then leave them in a sealed container for up to two weeks.
