It has taken me a long time to find a hummus recipe to my liking… smooth and light, but flavoursome. Turns out, a lot of the consistency comes from the order in which you blend the ingredients!
I’ve also always struggled to find a kitchen device that blends hummus well. I’d often cover the kitchen in all the devices I could find, all with hummus smeared all over them … Vitamix has been pretty good, but a traditional food blender still wins in my books.
Ingredients:
- 3 tbsps tahini
- Juice of 1 large lemon
- 400g boiled or canned chickpeas
- 4 tbsps extra virgin olive oil
- 2 cloves of garlic, minced
- 1/2- 1 tsp salt
- 1/2 tsp ground cumin
- 2 tbsps water
- A pinch of paprika for garnish
Method
- Start by mixing tahini and lemon juice in your food processor, letting combine for approximately 1 minute until thick and light in colour.
- Next add the chickpeas, and process until the chickpeas are minced.
- Add the minced garlic and pour in the olive oil a little bit at a time, whilst processing. Blend until the oil is incorporated. and the hummus mixture is smooth.
- Season with salt and cumin and pour in 1-2 tbsps water, if the hummus is too thick. Pulse for 1 more minute.
- Garnish with paprika.
