Ingredients
- 2 cups flour
- 3 tsps baking powder
- 1/2 cup sugar
- 1 egg
- 1/2 cup oil
- 1 tsp vanilla
- 1 cup yoghurt
- 1 cup fruit: it doesn’t matter what type of fruit it is, but apples and pears will need to be cooked to a soft texture first). Could use: peaches, nectarines, plums, apricots or rhubarb.
Method
- Beat together egg, oil, vanilla & yoghurt.
- Add flour, baking powder and sugar into bowl, along with chopped 1 cup of forgotten fruit, and gently, very gently, combine all of the ingredients.
- Spoon into muffin cases and sprinkle the top of each muffin with a pinch of brown sugar & a sprinkle of rolled oats.
- Cook at 180 for 20-25 mins (watch the tops don’t burn)
