Ingredients
- 2 TBSP butter
- 1 tsp crushed garlic
- 1/2 onion diced
- 2 TBSP tomato paste
- 2 tins chopped tomatoes 410g
- 4 cups vegetable stock 1L
- 1 tsp sugar
- 1 tsp smoked paprika
- 1/2 tsp more to taste chili powder
- 2 bay leaves
- 2 sprigs fresh thyme
- 1/2 cup cream
- Salt & pepper
Method
- First cook the butter/garlic/onion for 5 mins.
- Then add tomato paste and cook for another 2 mins.
- Add everything else except cream, and bring to the boil, then simmer for 30mins uncovered.
- Remove from heat, and remove the bay leaves/thyme.
- Add in cream.
- Whizz up with a blender/stick mixer until smooth.
