Creamy Tomato Soup

Ingredients

  • 2 TBSP butter
  • 1 tsp crushed garlic
  • 1/2 onion diced
  • 2 TBSP tomato paste
  • 2 tins chopped tomatoes 410g
  • 4 cups vegetable stock 1L
  • 1 tsp sugar
  • 1 tsp smoked paprika
  • 1/2 tsp more to taste chili powder
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 1/2 cup cream
  • Salt & pepper

 

Method

  1. First cook the butter/garlic/onion for 5 mins.
  2. Then add tomato paste and cook for another 2 mins.
  3. Add everything else except cream, and bring to the boil, then simmer for 30mins uncovered.
  4. Remove from heat, and remove the bay leaves/thyme.
  5. Add in cream.
  6. Whizz up with a blender/stick mixer until smooth.
